The vast majority of all packaged pasta is entirely vegan. While it would be nice, it isn't intentional that it is vegan-friendly. You can't preserve anything if it has eggs in it.

It is always good to double-check any food nutrition facts label for non-vegan ingredients. With that said, any pasta considered 'fresh' likely has eggs. Your best bet is to make homemade pasta if you're looking for that fresh taste and texture.

The Difference Between Fresh and Dried Pasta

The weird thing is that fresh and dried pasta are two entirely different foods. The primary difference is the type of dough and the use of eggs.

Fresh Pasta

  • Often, fresh pasta is made with eggs. But, there are alternative ways to make fresh pasta without them.
  • Fresh pasta tends to be more tender and delicate than dried pasta.
  • On average, fresh pasta is more expensive.

Dried Pasta

  • Dried pasta is generally made with semolina flour, water, and salt, which means it is vegan-friendly.
  • You can store dried pasta until the end of the world comes.
  • If you make a robust sauce, dried pasta holds up better, and flavor clings to it better.

The Best Vegan Egg Substitute

When making pasta or noodles, you can't go too crazy with your egg substitutes unless you want a specific flavor to accent your dish. Packaged pasta uses semolina flour to make egg-less pasta, and there is no reason you can't, too. 

Also, olive oil and egg whites have the same texture. You can use a little more oil in the place of the eggs.

Fresh Vegan Pasta Recipe

If you crave fresh pasta, you can totally do it without eggs. You just need a few ingredients to make all vegan pasta recipes easy.

  • 3 cups of all-purpose flour
  • 3/4 cups of water (if you need more, add it carefully.)
  • Two tablespoons of olive oil
  • Dash of salt
  1. Combine your water and oil in a small bowl and whisk them together.
  2. Using a flat surface, make a pile of flour and form a well in the center.
  3. You will slowly pour your water into the center before slowly bringing the flour into the well with careful fingers.
  4. Be warned; it's about to get messy.
  5. Keep pouring the water slowly until the flour has absorbed it all.
  6. The dough will start coming together and doing its thing. Knead it out until it's smooth. It will take about 5-8 minutes.
  7. If you feel like it is drying out, add a tiny bit of water. Be careful, though, you can always add a little water, but you can't take it out.
  8. When the dough has reached its doughy form, roll it into a ball and wrap it with cling wrap. 
  9. You will need to put it in the fridge for a minimum of 30 minutes and no longer than 18 hours.
  10. When you take it out of the refrigerator, you will need to cut it into four equal pieces.
  11. You will want to cover up the pieces you aren't working with, with a blanket to keep them from drying out.
  12. Toss some flour on the flat surface, grab the first ball, and start kneading until it's a single, paper-thin piece.
  13. The last step is to fold the flattened dough over several times before cutting out the pasta size you are looking for.

Vegan Ravioli Recipe

You've got your vegan pasta, so let's make an easy filling - classic vegan ricotta.

  • 1 cup of water
  • One garlic clove
  • 1 1/2 cups of raw cashews
  • 2 Tablespoons of fresh lemon juice (the not fresh is okay, too.)
  • 1 1/2 teaspoons of sea salt
  • One teaspoon of garlic powder
  • 2 Tablespoons of cornstarch

Vegan Ricotta Substitute

And, if ricotta isn't your thing, dress your vegan pasta up using whatever filling you like, including vegan cheese. A common and beloved vegan ricotta substitute is tofu. But, it can get confusing given the variety of textures that tofu provides.

You should stick to extra-firm silken tofu if you're shooting for the creamiest of ravioli.


How long do you air dry fresh pasta?

Once you've laid on the single strands of pasta, you will want to let it completely air dry. The drying process takes between 12 and 24 hours. Your kitchen's room temperature and humidity affect how long it takes your homemade pasta to dry.

Is a vegan pasta recipe the same as a vegan noodles recipe?

You will need to use a finer kind of flour if you want to make vegan noodles. Pasta flour is heavy and specifically made to pair with rich sauces.

  • Extra-virgin olive oil

  • Granulated sugar

Can you make fresh pasta without a machine?
