2. Add in water slowly until the dough is moist enough to stay together. Form the dough into a disc and wrap it in plastic. Refrigerate for 30-60 minutes.
3. Preheat the oven to 350 degrees Fahrenheit.
4. For the filling, start by heating the olive oil in a skillet. You'll add the ingredients in stages. Once it simmers, add mushrooms. Saute these for 3-5 minutes. After they are light brown, reduce heat and continue adding leeks, salt, and pepper. After another 3-5 minutes, the leeks will soften. Now it's time for the tomatoes and spinach. After 1-2 minutes, remove the pan from the heat.
5. Roll out the dough on a clean surface that's been dusted with the remaining flour.
6. Transfer the crust to a pie dish. Trim off any excess and fold the dough down underneath. Use your fingers to crimp the ends.
7. Bake for 15-20 minutes or until the dough no longer appears raw.
8. Add the tofu, yeast, and spices to a blender. Puree until smooth.
9. Spread half of the vegetables evenly at the bottom of the crust. Pour the tofu in the middle, and layer the remaining veggies on top.
10. Bake for another 40-45 minutes. The center should be golden brown and become more solid.
